Thai Quinoa Bowls with Pork
Buried underneath delicious, flavor-packed toppings is pretty much the only way I can get my family to eat quinoa sometimes.
I, on the other hand, absolutely love quinoa. And what’s not to love?!
Quinoa is packed full of vitamins, minerals, fiber, protein, even a little bit of omega-3 fatty acids.
It cooks really fast, and I think it’s an awesome way to add more filling power to a meal. Case in point: these bowls.
Getting a bit of meat, veggies, and quinoa all in one bite is so much more interesting and satisfying than eating any of those components on their own.
And give all of that goodness Thai-inspired chili/lime/garlic/peanut flavors? I was definitely sold, and my family loved it too! These bowls are delicious.
The recipe really only calls for bean sprouts, edamame, cilantro, and carrots as toppings, but we also added shredded purple cabbage and sliced scallions to ours. So good!
This pork bowl is an Under 500 meal, kind of. It barely makes the cut at 500 calories per serving, but it also packs 44 grams of protein!
