Roasted Potatoes with Parsley
Potatoes, in some form or another, are the ultimate cold weather comfort food. Try to change my mind.
I kept the sauce (dressing) and potatoes separate when we had these for dinner because I was pretty certain I would be the only one who liked the dish as a whole.
The roasted potatoes are totally delicious on their own, but the simple vinaigrette with fresh parsley and scallions is really what makes this side dish shine!
The vinaigrette uses champagne vinegar, which is pretty mild and not super acidic, as vinegars go.
To my surprise, my husband and one of my daughters could not get enough of these potatoes with the dressing. It was definitely a dinner success!
