Pomegranate-Cherry Chia Seed Ice Pops
The January/February issue of Food Network Magazine included a Superfood section, with 100 ideas to help incorporate more nutrient-rich superfoods into your diet.
My kids are huge fans of popsicles, but I wasn’t so sure about what they’d think about these pom-cherry-chia popsicles.
They’re loaded with antioxidants, some fiber, some Omega-3s, some protein… they’re definitely superfood popsicles!
But one thing they don’t have is added sugar–which is great!–but I wasn’t sure my kids would be very excited about less-sweet popsicles.
I shouldn’t have worried though, my kids LOVED these!
They’re definitely not overly sweet, but they’re also definitely sweet enough. Did that even make sense?!
Plus the mixture gets blended before it gets frozen, so no worries about chia-seedy popsicles!
The recipe calls for the popsicle mixture to be divided into four large popsicle molds, but since I knew (well, hoped…) that my kids would be eating these, I divided the mixture among much smaller popsicle molds (mine are from IKEA and I love them!!) and ended up with about 12 of them.
I’m so glad I did use the smaller molds, because both cherries and pomegranates are a very dark red (read: super stainerific), and these popsicles seem to melt pretty fast.
Not a great combination for anyone, but especially not for little kids!
Personally I wouldn’t recommend making these into big popsicles, but I would recommend making them into small ones because they are delicious and oh so healthy!!
