Monthly Muffins: May
The January/February 2018 issue of Food Network Magazine included such a fun feature: a muffin for every month of the year!
Strawberry-rhubarb is pretty much the official flavor profile of the month of May, and these muffins are so delicious!
This recipe states that it makes 12 muffins. It does not. The first time I made these I followed the recipe exactly and ended up with 16 overflowed, very muffin top-y muffins because they do rise quite a bit in the oven.
They were absolutely delicious, but all of that rising and overflowing did throw off the crumble-topping-to-muffin ratio. Never too much crumble topping, am I right?!
After that first round of muffins had been devoured, I made more of them–this time trusting my instincts more than the recipe when it came to filling the muffin cups.
I filled each muffin cup about 2/3 full instead of “most of the way”. That yielded 24 smaller muffins, each with its own delightful amount of crumble topping.
