Monthly Muffins: March
The January/February 2018 issue of Food Network Magazine included such a fun feature: a muffin for every month of the year!
Of course the March muffins needed to be all about St. Patrick’s Day! These savory muffins could definitely be a part of breakfast, but they would also be a great complement to a St. Patty’s Day dinner!
In my experience, the majority of Food Network Magazine’s cupcake and muffin recipes yield more than they say they will.
This recipe was supposed to make 12 muffins, filling each cup “all the way to the top”. I ended up with 18 muffins after filling each cup as full as I dared, knowing that they would rise while baking.
They do puff up quite a bit in the oven, but then they seem to deflate a bit toward the end of baking and cooling. I probably could’ve filled each cup a bit more, but even if I had I would’ve ended up with about 15 muffins, not the 12 the recipe claims.
Oh, and these muffins don’t come out of the liners very well until they’re completely cool. Just FYI.
