The January/February 2018 issue of Food Network Magazine included such a fun feature: a muffin for every month of the year!
You’re killin’ me, Smalls!
First you take the graham: this recipe calls for 1 1/2 cups graham cracker crumbs, which it suggests is about 15 whole crackers. I pulverized 15 crackers and ended up with way more crumbs than called for! I would say you’d only need about 10-12 grahams, but if you end up with extra crumbs you can always sprinkle them on top of the finished muffins as a garnish.
Put the chocolate on the graham: don’t divide the batter among 12 muffin cups. I filled each cup about 2/3 full and ended up with 19 muffins.
When the mallow’s flamin’…: don’t wait until the muffins are completely cool before topping them with the marshmallow cream. If the muffins are still warm the mallow cream will spread out on its own rather than staying in a glob. And next time I want to try toasting the marshmallow cream with a kitchen torch!
