Monthly Muffins: July
The January/February 2018 issue of Food Network Magazine included such a fun feature: a muffin for every month of the year!
Every year, usually starting in July, we start getting that oh-so-familiar summertime SOS: “Does anyone want zucchini? We have SO MANY!”
Raise your hand if you have ever received that–or sent it out yourself! Summer garden problems, for sure.
These muffins smell incredible as they bake, and they form the most delicate, beautiful crust on top thanks to a sprinkle of lemon poppy seed sugar.
My pickiest daughter declared after one bite, “these are de-LISH-ous!”, and if they pass her taste test, I can pretty much guarantee that you will love them too.
But be warned: if you tell my picky daughter that they have zucchini in them, we can’t be friends anymore. You know how it is.
As per pretty usual with FoodNetMag muffins, this recipe states that it makes 12 muffins, but it doesn’t. For me it made 16. The muffins rise quite a bit in the oven, so only fill each muffin cup about 2/3 full.
