Monthly Cookies: February
The January/February 2019 issue of Food Network Magazine included a fun feature: a cookie for every month of the year!
February’s cookie perfectly captured some of the most classic themes from the month of love: chocolate, roses, red (or pink!).
The cookies themselves are so delicious! I thought they would turn out about like chocolate sugar cookies, but they’re closer to chocolate shortbread.
They’re crunchy and buttery and chocolatey and perfect on their own, but then the cherry (actually I used strawberry…) icing and rose decorations just put them over the top for cuteness!
You will need 8″ lollipop sticks for these pops, which of course are not absolutely necessary, but they do add a super fun twist on these cookies as they become the stem of the rose.
I don’t know about you, but I think I’d take a bouquet of these beauties over real roses any day!
I followed this recipe pretty exactly, aside from using strawberry extract instead of cherry, and coloring my royal icing pink instead of red.
The dough takes a bit of patience and kneading to come together, so don’t despair if you think your crumbly mess is not what it’s supposed to look like.
Don’t roll your dough too thin or you won’t be able to insert the lollipop sticks.
I used a 3″ cookie cutter as directed, and I did end up with 12 cookies of that size and about 15 more 2 1/2″ cookies! For the 2 1/2″ cookies I did roll the dough thinner (about 1/4″ thick) and reduce the baking time to about 20 minutes.
