Homemade Hummus
Once upon a time when I was young, dumb, and full of hope for what the future had in store–who am I kidding, this was like two weeks ago–I joined some friends in an 8-week health challenge.
It’s not anything outrageous, just something to keep me accountable for re-establishing some healthier habits.
Every day of the challenge we do things like drinking enough water, tracking what we eat, getting some form of physical activity, and then each week of the challenge has an extra goal.
The extra goal for Week 1 was all about eating more fruits and veggies, which should’ve been super easy for me since I love fruits and veggies.
But here’s the thing: whenever I’m told that I neeeeeeed to do something, it instantly becomes the last thing in the world that I waaaaaant to do.
Please tell me I’m not the only one…
So by day 5 of Eat More Veggies week I was pretty much ready to cry if I saw another baby carrot.
Enter hummus.
Ridiculously easy to make and customize to my specific tastes (hello, extra garlic and extra drizzle of olive oil on top!), this hummus situation definitely did not make me want to cry. And it for sure made eating raw veggies more delicious!
