Asian Chicken Noodle Soup
This twist on chicken noodle soup looked so good in the magazine, and, as it turns out, it is perfect rainy day soup!
My husband thinks that any amount of fresh ginger is too much, and I chickened out and only used two star anise pods instead of four.
But I’m happy to report that the ginger definitely mellows as the soup cooks, and I could identify the star anise flavor but didn’t receive any complaints from any children or spouse!
Maybe it helps that I didn’t announce what was going into the soup as I cooked…
My kids loved the mini wontons in the soup in addition to the noodles. They were a fun, tasty little surprise!
All of the flavors of this soup blend together so deliciously, and at only 430 calories per serving, it’s definitely worth a rainy day repeat!
