Instant Pot Indian Butter Chicken
This recipe was written specifically for an Instant Pot brand pressure cooker, which I do not have.
The pressure cooker I used for this recipe is made by Fagor, so I only had to make a few tiny adjustments, and those were to the actual pressure cooking time and steam releasing.
I prepared and sautéed the spices and sauce and chicken as directed (oh! be so careful pouring the tomato puree into the already-hot pot–I got a few splatters back onto my shirt!), then put the lid on and pressure-cooked on high for 15 minutes before manually releasing the steam.
15 minutes might have been a bit of overkill for cooking time, but I wanted my chicken to be fall-apart tender. And it totally was!
The chicken itself was so tender and so flavorful and so delicious! I served our butter chicken over jasmine rice, which so perfectly soaked up that rich, buttery-smooth sauce.
Oh my goodness I wish I had the words to tell you how delectable this chicken is!
It is definitely a pressure cooker must-make.
