Low-Fat Scalloped Potatoes
Out of medical necessity, we are a pretty low-fat family.
It’s usually not a problem, but traditionally decadent holiday foods can sometimes be tricky to adapt.
I was so excited to find this vintage FoodNetMag gem, it was the perfect side dish for our Easter dinner last year!
Everyone in our family loved it, which made me love it even more. I mean, what’s not to love about creamy, cheesy potatoes?
It’s delicious, relatively quick to make, and just as satisfying as a traditional scalloped potato recipe.
Best of all, there are only about 290 calories and 7 grams of fat in each serving–about half the calories and less than 1/3 of the fat of a classic recipe!
