Barley Caesar Salad
The January/February issue of Food Network Magazine included a superfood section, with 100 ideas for getting more nutrient-packed superfoods in your diet.
The 100 ideas included all sorts of superfoods, from chia seeds to kale to turmeric–even dark chocolate!
The superfood in this salad is a whole grain that a lot of times gets overlooked: barley.
Barley is full of vitamins, minerals, and is a great source of fiber. It can help lower cholesterol, help lower blood sugar levels, and help you feel fuller for longer.
I definitely noticed that last benefit with this salad! In my opinion the addition of the barley could take this salad from a side dish to a main dish, it’s that filling and satisfying!
The texture of the cooked barley added a lot to the salad also. The barley is a bit chewy after once it’s cooked, which was a delightful contrast to the crunch of the lettuce, the crispiness of the sourdough croutons, and the creaminess of the freshly-made Caesar dressing.
Speaking of which, if you love Caesar salad (like I do!) but you’ve never made your own Caesar dressing (like I hadn’t!), here is your chance! It will give you an opportunity to buy and use anchovies, but as long as you can run a blender you can make Caesar dressing. And you’ll be able to control exactly what goes into it. Win!
And hey, if you’re anything like me or my kids, you won’t be able to get enough of the sourdough croutons, both on the salad and just plain. It might be a good idea to double that part of the recipe.
