Lemon-Chia Seed Muffins
Lemon-poppy seed muffins are great, but lemon-chia seed muffins are better!
I don’t know why I’ve never thought to use chia seeds instead of poppy seeds, but I think I will be using chia instead from now on.
This recipe is so easy and straightforward. No mixer required, even!
The first time I made these muffins I followed the recipe pretty exactly, but I thought they could use more chia seeds. Maybe I just like my muffins super seedy… The second time I made these I doubled the amount of chia seeds and liked that a lot better.
As I’ve found with the majority of FoodNetMag’s cupcake/muffin recipes, this recipe makes more than the 12 muffins it claims to make. It’s not a bad thing, hooray for more muffins!
If you tried to divide this batter between 12 muffin cups, you would end up with a lemony, chia-y, overflowed mess. Instead, fill each cup about 2/3 full, and you will end up with about 18 muffins and no overflow.
And hey, if you buy a giant bag of chia seeds (like I did!) and want some more ideas of what to do with them, try making Chia Seed Pudding at night for a quick breakfast in the morning!
