No-Bake Oat Cookies
I hate peanut butter.
There. I said it.
Actually, I don’t hate peanut butter. Yes, I just contradicted myself. I’m super complicated like that.
I love peanut butter by itself, and it’s pretty tough to beat a classic pb&j, but I hate peanut butter IN things.
Peanut butter blossoms? No, thank you. Peanut butter milkshake/smoothie/protein shake? NO, thank you. Classic no-bake cookies? Still no. Thank you.
I love the idea of no-bake cookies, and they are one of my husband’s favorite treats, but one of the main ingredients in them is peanut butter. Grrrrrrrr.
That’s why I was so excited to come across this little recipe for no-bakes. Instead of peanut butter it calls for cookie butter.
If you are already familiar with cookie butter, I rejoice that you have experienced true joy in your life.
If you aren’t already familiar with cookie butter, allow me to introduce you–but be warned that your life will forever be changed for the better.
Cookie butter is a spread made from speculoos cookies. Its consistency is similar to a very smooth peanut butter, but with the sweet cinnamony flavor of speculoos cookies.
The cookie butter I used for this recipe was Lotus brand, made from their Biscoff cookies. Yes, those Biscoff cookies that are served on so many airplanes. Speculoos Cookie Butter (14.1 Oz Jar) (Basic) (Basic pack)“>Trader Joe’s has their own cookie butter as well.
Cookie butter + chocolate + oats + coconut + awesomeness. These are definitely my new favorite no-bakes!
