Monthly Muffins: April
The January/February 2018 issue of Food Network Magazine included such a fun feature: a muffin for every month of the year!
These coconutty spice cake, carrot cake, macadamia’d beauties have a lot going on, but it all combines so deliciously! Such great flavors for an April muffin.
This recipe says that it makes 12 muffins. The batter is super thick, and you can fill each muffin cup fuller than you think (they don’t rise tooooo much), but even so I still ended up with 16 muffins.
Also, I had to make extra glaze after I ran out halfway through glazing, so I would recommend doubling just the glaze portion of this recipe.
