Make-Ahead Breakfasts: Chia Seed Pudding

They say that breakfast is the most important meal of the day, but at least at our house it is usually the craziest, most rushed, most hectic meal of the day!
I’ve found that if I have a plan ahead of time, there aren’t as many mornings where we fall back on our classic standbys of toast or cereal.
I have loved making overnight oatmeal, and I think I might love overnight chia pudding even more! As long as I think and prep ahead, this pudding is about as quick of a breakfast as we can get.
This recipe is from Chef Giada de Laurentiis, and it is delicious! She topped hers with strawberries and sliced almonds, but in my opinion it’s even better with fresh mango. The pudding itself is such a great canvas for just about any topping you’d like!
